The BFM loves Annaghmore Mushrooms!!! I made an awesome cream of mushroom and leek soup. I fried 1 chopped onion, 2 chopped cloves of garlic,one cut leak and a punnet of white mushrooms for about 10 mins in rapeseed oil of course,1 tablespoon.
Meanwhile I prepared 2 pints of vegetable stock. Then added it to the pot and boiled for a further 10 mins. After that I blitzed the mixture into a smooth runny paste. At this stage I seasoned with 1/2 teaspoon of salt and 1/2 teaspoon of crushed black pepper. Then I added 250ml of cream, made some toast with plenty of butter. Then gobbled it all up. The taste of mushrooms was evident in every spoonful!!!
