I cooked some chicken saag last night and it went down a treat. I’m going to give u a tip to make life easier. I prepared a batch of basic Punjabi masala in advance and froze it (plastic tub). I defrosted a tub of it along with two breasts of chicken.
Once thawed I diced an onion, clove of garlic and 1/2 inch of ginger and added to 1/2 tbsp of ghee and cooked til brown. I added 1/2 tsp turmeric and 1 tsp of Garam masala and then the diced chicken. Whilst this was cooking I blitzed fresh spinach and kale (all organic) with half the Punjabi masala. I added the spinach/kale mix to the pan and rest of masala and cooked for 15 minutes. Once ready it was served with chapattis and a salad…….delicious!!
